  • 1/4 cup soy sauce
  • 2 tablespoons gochujang (Korean red pepper paste)
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 2 cups cooked rice (white or brown)
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds for garnish
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the marinade by combining soy sauce, gochujang, sesame oil, honey, garlic, ginger, rice vinegar, sesame seeds, and black pepper in a mixing bowl.
  2. Add chicken thighs to the marinade and ensure they are well coated. Cover and refrigerate for at least 1 hour or overnight for deeper flavor.
  3. Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side until fully cooked.
  4. Let the chicken rest for 5 minutes before slicing it into bite-sized pieces.
  5. Assemble your bowls by dividing cooked rice among serving bowls and topping with sliced chicken, cucumber slices, julienned carrots, and kimchi. Garnish with chopped green onions and toasted sesame seeds.
