  • 1 1/4 cup All-Purpose Flour
  • 3/4 cup Cake Flour
  • 1 tsp Corn Starch
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Cold Unsalted Butter, cubed
  • 1/2 cup Light Brown Sugar, packed
  • 1/4 cup Granulated Sugar
  • 1 Large Egg
  • 1 Egg Yolk
  • 2 cups Milk Chocolate Chips

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. Cream the cold butter in a stand mixer at medium-low speed until smooth. Gradually add brown sugar and granulated sugar; mix until fluffy.
  4. Add the egg and egg yolk (and vanilla if using) to the butter mixture; blend well.
  5. Slowly incorporate the dry ingredients into the wet mixture until combined. Fold in chocolate chips.
  6. Measure out six large cookie balls (about 5.7 oz each) without flattening them and place on a lined baking sheet.
  7. Bake for 10-12 minutes until golden brown on top; remove from oven before fully set as they will continue cooking while cooling.
  8. Allow to cool for at least 15-30 minutes before enjoying.
