  • 12 cooked lasagna noodles
  • 1 pound ground beef
  • 24 ounces marinara sauce
  • 16 ounces ricotta cheese
  • 3 cups mozzarella cheese (divided)
  • ½ cup Parmesan cheese (shredded)
  • 1 large egg
  • Fresh parsley (for garnish)
  • 2 tablespoons olive oil
  • ½ cup yellow onion (diced)
  • 3 cloves garlic (minced)
  • ¼ teaspoon crushed red pepper
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F.
  2. In a skillet, heat olive oil and brown the ground beef. Add diced onions and garlic, cooking until soft. Stir in the marinara sauce and let simmer.
  3. Cook lasagna noodles according to package instructions; drain and set aside.
  4. In a bowl, combine ricotta cheese, egg, half of the Parmesan cheese, one and a half cups of mozzarella cheese, and parsley.
  5. Spread some meat sauce on the bottom of a baking dish. Lay out each noodle and fill with the ricotta mixture followed by meat sauce; roll up tightly.
  6. Place seam-side down in the dish, cover with remaining meat sauce and mozzarella cheese.
  7. Bake covered with foil for 38 minutes; uncover for an additional 2 minutes until golden.
