  • 3 large eggs
  • 3 tbsp lemon juice

  • 1/2 cup whole milk
  • 1 1/2 cups powdered sugar
  • 3 to 4 tbsp whole milk
  • 1/2 tsp lavender extract
  • 2 to 3 drops purple food coloring

Instructions

  1. Preheat oven to 350°F (180°C) and grease a loaf pan with parchment paper.
  2. In a bowl, whisk together flour and baking powder.
  3. Combine sugar, lemon zest, and lavender in a large bowl; rub together to release oils.
  4. Cream butter into the lavender-sugar mixture until fluffy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Gradually incorporate dry ingredients and milk until just combined.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until golden brown and a skewer comes out clean.

  10. In another bowl, whisk together powdered sugar, whole milk, and lavender extract until smooth. Drizzle over cooled cake.
