  • 3 boneless skinless chicken thighs
  • 12 oz farfalle pasta (gluten-free)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup diced sun-dried tomatoes
  • 1 cup diced spinach
  • 3/4 tbsp smoked sweet paprika
  • 1 tbsp Italian seasoning
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp sun-dried tomato oil (from the jar of sun-dried tomatoes)
  • 2 tbsp butter
  • 2 tbsp dried shallots
  • 2 tbsp minced garlic
  • 1 tbsp minced onion
  • 3 tbsp Bob's Red Mill 1:1 gluten-free flour
  • 2 tbsp tomato paste
  • Chopped fresh basil (for garnish)

Instructions

  1. Season the chicken thighs with smoked sweet paprika, Italian seasoning, salt, and black pepper. In a skillet over medium heat, sear the chicken in sun-dried tomato oil until golden brown. Remove from skillet.
  2. Cook farfalle pasta according to package instructions; reserve some pasta water before draining.
  3. In the same skillet, melt butter and sauté dried shallots, garlic, and onion until fragrant. Stir in gluten-free flour to create a roux.
  4. Gradually add chicken broth and heavy cream; stir until smooth. Mix in parmesan cheese, sun-dried tomatoes, spinach, additional seasonings, and return chicken to the sauce.
  5. Combine cooked pasta with sauce and add reserved pasta water as needed for consistency. Garnish with fresh basil before serving.
