  • 1 can garbanzo beans (15 ounces), rinsed and drained
  • 1 can cannellini beans (15 ounces), rinsed and drained
  • 1 can kidney beans (15 ounces), rinsed and drained
  • ¼ cup red onion, chopped
  • ¾ cup celery, chopped
  • 1 small cucumber, peeled, seeded, and chopped
  • ¾ cup fresh Italian parsley, chopped
  • ¼ cup fresh basil, chopped
  • 2 tomatoes, chopped
  • ¼ cup extra-virgin olive oil
  • Juice of 1.5 lemons
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions
