  • 1 (15 oz) can chickpeas (rinsed and drained)
  • 2 mini cucumbers (chopped)
  • 1 tablespoon red onion (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup Kalamata olives
  • 3.5 oz feta cheese (packed in oil & herbs if possible)
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic (minced)
  • Salt & pepper (to taste)

Instructions

  1. Drain and rinse the chickpeas to reduce sodium content. Place them in a large salad bowl.
  2. Chop cucumbers, red onion, oregano, parsley, bell pepper, and cherry tomatoes. Add them to the bowl with chickpeas.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  4. Drizzle dressing over the salad and toss gently until all ingredients are well coated.
  5. Taste and adjust seasoning before serving immediately or refrigerating for later.
