- 2 cups cooked quinoa or couscous
- 1 cup cherry tomatoes
- 1 cucumber
- 1 bell pepper
- 1 cup red onion
- 1 cup chickpeas

- ¼ cup Kalamata olives
- Olive oil, salt, and pepper
