  • 1 pound flank steak (or chicken/turkey)
  • 2 cups cooked quinoa or couscous
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1 bell pepper
  • 1 cup red onion
  • 1 cup chickpeas
  • ½ cup feta cheese (optional)
  • ¼ cup Kalamata olives
  • Olive oil, salt, and pepper
  • Juice of 1 lemon

Instructions

  1. Marinate the steak in olive oil, lemon juice, paprika, salt, and pepper for 15-30 minutes.
  2. Cook quinoa or couscous according to package instructions.
  3. Grill the marinated steak over medium-high heat for about 6-8 minutes on each side until desired doneness.
  4. Allow steak to rest for 5 minutes before slicing against the grain.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and chickpeas with olive oil, salt, and pepper.
  6. Assemble bowls with quinoa/couscous topped with steak slices and vegetable mix. Add feta and olives if desired.
  7. Garnish with fresh parsley and serve with extra lemon juice.
