  • 1 1/2 pounds lean ground beef (or ground turkey)
  • 2/3 cup panko breadcrumbs
  • 1/2 cup chopped onion
  • 1 tablespoon barbecue sauce
  • 1 tablespoon mustard
  • 1 egg
  • For the sauce: 1/3 cup light brown sugar
  • 1/2 cup ketchup
  • 2 teaspoons dijon mustard
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix together brown sugar, ketchup, dijon mustard, and nutmeg for the sauce.
  3. In a large bowl, combine ground beef (or turkey), breadcrumbs, onion, barbecue sauce, mustard, garlic powder, chili powder, salt, pepper, and egg. Mix until just combined.
  4. Scoop the mixture into a greased muffin tin and press down firmly.
  5. Bake for 15 minutes; remove from oven, add sauce on top of each mini loaf, and return to bake for an additional 10–15 minutes until cooked through.
  6. Allow to cool slightly before serving with your favorite sides.
