  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 2 Tbsp avocado oil
  • 2 garlic cloves, minced
  • Fresh basil, chopped
  • Italian seasoning
  • Kosher salt
  • Fresh black pepper

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, avocado oil, minced garlic, Italian seasoning, salt, and pepper for the sauce.
  3. In another bowl, combine halved tomatoes and mozzarella balls with salt and pepper.
  4. Heat oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear for 1-2 minutes per side until golden brown.
  5. Pour the balsamic sauce over the chicken and layer with tomato-mozzarella mixture.
  6. Bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165°F. Let rest for 5 minutes before serving.
