  • 3 ½ cups shredded cheddar cheese
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups beef broth
  • 1 (16 oz.) box elbow macaroni (uncooked)
  • ¾ cup sour cream
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef with salt and pepper until fully cooked, then drain excess grease.
  2. Add diced onions and minced garlic; sauté for about one minute until fragrant.
  3. Stir in beef broth and uncooked elbow macaroni; bring to a gentle simmer. Cover the pot to cook the pasta.
  4. Once pasta is tender, reduce heat and mix in sour cream and half of the milk until creamy.
  5. Gradually add 2 ½ cups of shredded cheddar cheese until melted. Top with remaining cheese and cover for a few minutes to allow melting.
  6. Serve warm, garnished with parsley if desired.
