  • 2 15-ounce cans tomato sauce
  • 1 tablespoon ground cinnamon
  • 1 package pastitsio noodles or mostaccioli
  • 4 cups kasseri cheese, grated (or similar cheese)
  • 4 eggs
  • 1 ½ sticks unsalted butter
  • 1 cup flour
  • 5 ½ cups whole milk

Instructions

  1. Prepare the meat sauce: Sauté onions in olive oil until translucent. Add ground beef and cook until browned. Stir in tomato sauce and cinnamon; simmer for three hours.
  2. Cook noodles: Boil salted water and cook noodles until al dente. Drain and mix in one beaten egg.
  3. Assemble: Spread noodle mixture in a greased pan, layer with cheese and meat sauce.
  4. Make béchamel: Melt butter, whisk in flour, then gradually add milk until thickened. Mix with beaten eggs.
  5. Final assembly: Pour béchamel over layers and top with remaining cheese.
