  • 1 ¾ cups pumpkin puree
  • ¾ cup brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 ¾ cups whole milk

Instructions

  1. Preheat your oven to 375°F (190°C). Press the store-bought pie crust into a 9-inch pie dish and place on a baking tray.
  2. In a large bowl, whisk together pumpkin puree, brown sugar, eggs, cinnamon, nutmeg, ginger, and salt. Add whole milk and mix until smooth.
  3. Pour the filling into the crust, loosely covering edges with foil to prevent burning. Bake for about 70 minutes or until mostly set with a slight jiggle in the center.
  4. Allow to cool completely on a wire rack before chilling in the refrigerator for about 5 hours.
