  • 2 cups heavy cream
  • 2 teaspoons vanilla bean paste
  • 5 egg yolks
  • ⅓ cup granulated sugar (plus more for topping)
  • ⅔ cup pumpkin puree
  • ¼ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • tiny pinch ground cloves
  • 34 small-medium pumpkins (for serving)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream and vanilla bean paste until just below boiling. Remove from heat.
  3. In a bowl, whisk the egg yolks with sugar until creamy.
  4. Gradually whisk the warm cream into the egg mixture to temper it.
  5. Stir in pumpkin puree and spices.
  6. Pour the mixture into hollowed-out mini pumpkins or ramekins. Place them in a baking dish filled with hot water.
  7. Bake for about 65 minutes until set but slightly jiggly in the center.
  8. Chill for at least four hours before serving.
  9. Just before serving, sprinkle sugar on top and use a kitchen torch to caramelize.
