  • 1/2 tablespoon olive oil
  • 1 pound extra lean ground turkey
  • 1 and 1/3 cups orzo (220 grams)
  • 2 tablespoons lemon pepper seasoning
  • 2 tablespoons dijon mustard
  • 1/4 cup lemon juice (about 1 large lemon)
  • 2 and 1/2 cups chicken broth (1 cup + 1 and 1/2 cups)
  • 2 tablespoons butter
  • 1 cup milk
  • 2 ounces shredded parmesan
  • Red pepper flakes (to serve)

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté broccoli until bright green and tender.
  2. Add ground turkey to the skillet, breaking it apart as it cooks until no longer pink.
  3. Stir in orzo and lemon pepper seasoning; add one cup of chicken broth and let simmer.
  4. Once most liquid is absorbed, mix in dijon mustard, lemon juice, remaining chicken broth, butter, milk, and shredded parmesan until creamy.
