  • 1 1/2 cups dry red lentils
  • 1 large carrot (finely diced)
  • 1 small bell pepper
  • 1 large onion (chopped)
  • 4 cloves garlic (minced)
  • 1 heaped tbsp fresh ginger (minced)
  • 1/2 tbsp vegetable oil
  • 3 cups vegetable broth
  • 1 cup canned coconut milk
  • 1 1/2 tsp ground cumin
  • 1 tbsp curry powder
  • 1/2 tbsp sweetener of choice
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • Sea salt and black pepper (to taste)
  • 1/3 tsp red pepper flakes (optional)

Instructions

  1. Rinse red lentils under cold water until clear.
  2. In a pot over medium heat, sauté chopped onion in vegetable oil until translucent (about 3-4 minutes). Add garlic, ginger, carrot, and bell pepper; cook until softened.
  3. Stir in spices and rinsed lentils with vegetable broth. Bring to a boil, then reduce heat and simmer for about 10 minutes.
  4. Add coconut milk and cook for another 5 minutes until desired thickness is reached.
  5. Season with salt and pepper before serving warm with rice or naan.
