  • 1 pound sweet cherry tomatoes
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Salt and black pepper
  • 8 ounces ricotta
  • 1 bunch fresh basil (divided)
  • 1 crusty bread loaf
  • Balsamic glaze

Instructions

  1. Preheat oven to 400ºF. Toss cherry tomatoes with 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper in a baking dish. Roast for about 20 minutes until slightly burst.
  2. In a blender or food processor, combine ricotta, 1 minced garlic clove, another tablespoon of olive oil, half a cup of fresh basil leaves, salt, and pepper. Blend until smooth and refrigerate.
  3. Slice the bread into 12 half-inch thick pieces. Brush both sides of each slice with a mixture of remaining olive oil and the last minced garlic clove. Toast on a baking sheet for about 10-12 minutes until golden brown.
  4. Assemble by spreading each toasted bread slice with the ricotta mixture and topping with roasted tomatoes and their juices. Garnish with fresh basil and drizzle balsamic glaze before serving.
