  • 4 large Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic
  • 1/2 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 425°F (220°C). Slice potatoes into 1/4-inch rounds.
  2. In a saucepan, combine melted butter, olive oil, and minced garlic over low heat for 1-2 minutes. Stir in heavy cream and Parmesan until smooth. Add thyme, smoked paprika, salt, and pepper; simmer for 2 minutes.
  3. On a parchment-lined baking sheet, layer three potato rounds side by side. Spoon sauce over them, then add three more rounds on top. Repeat layering until five layers are built.
  4. Roast for 25-30 minutes or until golden brown and fork-tender. Brush with remaining sauce halfway through baking.
  5. Let rest for 3-4 minutes before serving.
