  • 1 lb chicken sausage (sliced)
  • 1 large red bell pepper (chopped)
  • 1 large onion (chopped)
  • 12 large eggs
  • 23 tablespoons olive oil
  • 1 cup cheddar cheese (or your choice)
  • Sea salt, pepper, paprika, onion powder, garlic powder to taste
  • Fresh chives for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. On one sheet pan, combine potatoes, sliced chicken sausage, bell pepper, and onion. Spread evenly.
