  • 4 large organic sweet potatoes
  • 23 tablespoons extra virgin olive oil
  • 1/2 cup almond milk
  • 1/4 cup pure maple syrup
  • 1 cup organic raisins
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube sweet potatoes; boil until fork-tender.
  3. Drain and return to pot. Blend with olive oil, almond milk, vanilla extract, butter, brown sugar, cinnamon, nutmeg, and allspice until smooth.
  4. Fold in raisins and half of the pecans.
  5. Layer half of the mixture in a baking dish; top with vegan marshmallows and pecans. Repeat layers.
  6. Bake for about 90 minutes or until golden brown on top.
