  • 1 small Yellow onion (diced)
  • 1 Red bell pepper (diced)
  • 1 Yellow bell pepper (diced)
  • 1 Poblano chili (diced)
  • 34 cloves Garlic (minced)
  • 1 cup Basmati white rice
  • 2 cups Chicken broth
  • 1 cup Salsa
  • 1 can (15 oz Black beans, drained and rinsed)
  • 1 tsp chili powder
  • 2 cups Cooked (diced chicken)
  • Juice of 1 lime
  • ¼ cup fresh Cilantro (chopped)
  • 1 cup Yellow corn
  • 1 cup Mexican cheese blend (shredded)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and peppers; sauté for 4-5 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  2. Stir in basmati rice until coated with the veggies. Pour in chicken broth, salsa, black beans, and chili powder; mix well.
  3. Bring to a gentle boil, then cover and reduce heat to low. Simmer for about 25 minutes until rice is cooked.
  4. Stir in cooked chicken, lime juice, chopped cilantro, and corn. Top with shredded cheese; cover for 2-3 minutes until melted.
