  • ⅓ cup neutral oil (vegetable or canola)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup softened unsalted butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch salt
  • 12 oz candy melts
  • White nonpareils or sprinkles

Instructions

  1. Preheat oven to 325-350°F (162-175°C). Mix cake ingredients in a large bowl and pour into a greased pan. Bake until golden brown.
  2. Crumble the baked cake in a mixing bowl while still warm.
  3. Combine buttercream ingredients and mix into the crumbled cake until well incorporated.
  4. Roll into 1¼-inch balls and chill for 15 minutes.
  5. Dip lollipop sticks in melted candy melts and insert them into each cake ball.
  6. Chill again, then dip each pop into melted candy melts and tap off excess coating.
  7. Decorate with sprinkles before they set.
