  • 12 lbs sirloin steak
  • ¾ cup olive oil
  • 3 Tbsp fresh lime juice
  • ¾ cup chipotle peppers in adobo sauce
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp cumin
  • ½ tsp dried oregano
  • 2 small avocados
  • 3 Tbsp fresh cilantro, chopped
  • 12 jalapeños, finely diced
  • 2 bell peppers, thinly sliced
  • 1 onion, thinly sliced
  • 1 tsp olive oil (to cook the peppers)
  • ½ cup rice, uncooked (brown rice also works)
  • ½ cup corn kernels
  • ½ cup canned black beans
  • ½ cup tomatoes, sliced
  • Sour cream (for serving)
  • Shredded romaine (optional)
  • Shredded cheese (optional)

Instructions

  1. Marinate the steak for 10-20 minutes with olive oil, lime juice, chipotle peppers, garlic, salt, pepper, cumin, and oregano.
  2. Cook rice according to package instructions.
  3. Heat oil in a skillet over medium-high heat and cook the marinated steak for about 6-10 minutes until desired doneness.
  4. Sauté sliced bell peppers and onions in the same skillet until charred.
  5. Mash avocados with salt, cilantro, and jalapeños for quick guacamole.
  6. Assemble bowls with a base of rice topped with steak slices, sautéed veggies, guacamole, corn, black beans, and optional toppings.
