  • 2/3 cup whole milk (160g), warm
  • 1/4 cup sugar (50g)
  • 2 teaspoons active dry yeast
  • 2 1/2 cups all-purpose flour (325g)
  • 1 large egg
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, softened (60g)
  • Filling: 3 tbsp unsalted butter (42g), 4-6 tbsp heavy cream, 4 tbsp brown or white sugar, 2 tbsp cocoa powder, 1-2 tsp instant coffee powder, 100g semi-sweet or dark chocolate
  • Icing: 1/4 cup heavy cream (60g), 1 cup powdered sugar (130g), 1/2 tsp instant coffee powder, 2-4 tbsp heavy cream depending on how thick you want the icing

Instructions

  1. Warm the milk to 100-110F. Combine with sugar and yeast; let it froth for about 5 minutes.
  2. In a bowl, mix flour, salt, softened butter, egg, and the yeast mixture until a soft dough forms. Knead until smooth.
  3. Let the dough rise in a warm place for about an hour until doubled in size.
  4. Prepare the filling by melting butter and cream together; stir in sugar, cocoa powder, coffee powder, and chocolate until smooth.
  5. Roll out the dough into a rectangle; spread filling evenly and roll tightly. Slice into pieces.
  6. Place in a greased dish to rise for another 30 minutes.
  7. Preheat oven to 350F (175C) and bake rolls for about 25 minutes until golden brown.
  8. Make icing by whisking powdered sugar with heavy cream and coffee powder; drizzle over warm rolls.
