  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 lb ground beef or turkey
  • 1 oz taco seasoning
  • 1 can black beans (15 oz)
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional fresh cilantro and lime wedges

Instructions

  1. Rinse rice and combine with chicken broth in a pot. Bring to a boil, then reduce heat, cover, and simmer for about 18 minutes until tender.
  2. In a skillet over medium heat, add olive oil. Once hot, add ground beef or turkey and cook until browned. Stir in taco seasoning.
  3. Add drained black beans and corn to the skillet. Simmer for an additional 5 minutes to meld flavors.
  4. Layer cooked rice at the bottom of each bowl, top with meat mixture, diced tomatoes, lettuce, cheese, salsa, and any additional toppings.
