  • 3 cups golden potatoes
  • 1 teaspoon fresh rosemary
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 4 cloves garlic
  • 2 teaspoons tomato paste
  • 2 quarts beef stock
  • 2 sprigs fresh thyme
  • 1 cup flour (for dumplings)
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt (for dumplings)
  • 1 tablespoon butter (room temperature)
  • 1/3 to 1/2 cup milk

Instructions

  1. Brown the stew meat in a large pot over medium-high heat. Remove and set aside.
  2. Sauté chopped onions until translucent, then add minced garlic, carrots, and potatoes.
  3. Sprinkle in flour, rosemary, salt, and pepper; add tomato paste before slowly pouring in beef stock.
  4. Return browned meat and thyme; bring to a boil then reduce heat and simmer for about two hours.
  5. Prepare dumpling batter by mixing flour, baking powder, sea salt, butter, and milk until just combined.
  6. Drop spoonfuls of dumpling batter onto the surface of your simmering stew; cover tightly and steam for 15-20 minutes.
