  • 12 ounces lasagna noodles
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground turkey
  • 28 ounces tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 15 ounces ricotta cheese
  • 2 large eggs
  • 16 ounces mozzarella cheese, shredded
  • 1 cup Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet over medium heat, sauté diced onions and minced garlic in olive oil until soft.
  4. Add ground turkey and cook until browned; then stir in tomato sauce, tomato paste, oregano, basil, sugar, salt, red pepper flakes, and black pepper. Simmer for 5 minutes.
  5. In a bowl, combine ricotta cheese, eggs, mozzarella (reserve some), and Parmesan cheese until smooth.
  6. In a greased baking dish, layer meat sauce, noodles, cheese mixture repeatedly until all ingredients are used; top with reserved cheeses.
  7. Bake uncovered for about 30 minutes; broil for an additional 5 minutes if desired.
  8. Let sit for 10 minutes before slicing and serving.
