  • 1 cup (240ml) heavy whipping cream, room temperature
  • 5 tbsp (41g) all-purpose flour, sifted
  • 2 cups (268g) graham cracker crumbs
  • 1/2 cup (112g) salted butter, melted
  • 3 tbsp brown sugar
  • 4 oz (2/3 cup | 116g) semi-sweet chocolate chips
  • 6 tbsp (90ml) heavy whipping cream
  • 24 oz (678g) cream cheese, room temperature
  • 1 cup (144g) light brown sugar
  • 3 tbsp (24g) all-purpose flour
  • 1 cup (230g) sour cream
  • 1 1/2 tbsp vanilla extract
  • 3 large eggs
  • 2 oz (1/3 cup | 58g) semi-sweet chocolate chips
  • 3 tbsp (45ml) heavy whipping cream
  • 1/4 cup (28g) pecan chips

Instructions

  1. Prepare the caramel sauce by melting sugar in a saucepan until golden, then whisk in butter and heavy cream.
  2. For the crust, mix graham cracker crumbs with melted butter and brown sugar; press into a springform pan and bake at 325°F for 10 minutes.
  3. Layer half the caramel sauce mixed with pecans into the cooled crust.
  4. Melt chocolate chips in heated cream; pour over the caramel layer.
  5. Beat together cream cheese, sugar, flour, sour cream, vanilla, and eggs; pour over the chocolate layer.
  6. Bake at 300°F for about 1 hour and 35 minutes using a water bath.
  7. Cool gradually in the oven before refrigerating for several hours or overnight.
