  • 3 tbsp water
  • 1/2 cup vegan butter (soft)
  • 1/2 cup brown sugar (packed)
  • 5 tbsp cane sugar (organic)
  • 1 tsp vanilla extract
  • 1 1/2 cups gluten free all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/2 cup vegan mini chocolate chips
  • 8 gluten-free chocolate sandwich cookies
  • 3/4 cup gluten free all purpose flour
  • 1/4 cup Organic Cocoa Powder
  • 1/2 tsp baking soda
  • 1/2 tsp instant espresso (optional)
  • 1/8 tsp salt
  • 1/3 cup vegan chocolate chips
  • 1/2 cup full fat coconut milk (from the can)
  • 1/4 cup vegan butter (melted)
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar (packed)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
  2. In a bowl, mix ground flax meal with water and let sit to thicken.
  3. Cream together softened vegan butter, brown sugar, and cane sugar until fluffy. Add vanilla and flax mixture.
  4. Fold in gluten-free flour, baking powder, baking soda, salt, and chocolate chips until combined. Spread into the prepared pan.
  5. Layer 16 halves of chocolate sandwich cookies over the cookie dough layer.
  6. In another bowl, combine gluten-free flour, cocoa powder, baking soda, and salt. In a separate bowl, whisk warm coconut milk with chocolate chips until melted.
  7. Mix melted chocolate mixture with dry ingredients until well combined; pour over sandwich cookie layer.
  8. Bake for 17-20 minutes or until set but fudgy in the center. Let cool before slicing.
