  • 4 boneless, skinless chicken breasts
  • 2 cups low-sodium chicken broth
  • 1 can white kidney beans (drained and rinsed)
  • 1 can sweet corn (drained)
  • 1 can green chiles
  • 4 ounces cream cheese (room temperature)
  • 1 teaspoon green hot sauce
  • 1 teaspoon chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 1 tablespoon cornstarch (optional)
  • 1 tablespoon water (optional)
  • Chips, avocado, lime wedges, salsa, cheese, or jalapeños for serving

Instructions

  1. In a Dutch oven, combine the chicken breasts and chicken broth. Bring to a simmer over medium-high heat, then cover and cook on medium-low for about 15 minutes until cooked through.
  2. Shred the cooked chicken with two forks and return it to the pot.
  3. Add white kidney beans, sweet corn, green chiles, hot sauce, chili powder, onion powder, and salt. Stir well.
  4. Cube the cream cheese and mix into the pot. Simmer over medium-low heat for 10 minutes, stirring occasionally.
  5. If desired, thicken with a cornstarch slurry (mix cornstarch with water first).
  6. Serve hot topped with your favorite garnishes.
