  • 1 small yellow onion (chopped)
  • 2 garlic cloves (finely minced)
  • 2 1/2 cups low-sodium chicken broth
  • 2 (4 oz) cans diced green chilies
  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Juice from 1/2 small lime
  • Salt and freshly ground black pepper (to taste)
  • 2 (15 oz) cans great northern beans
  • 2 heaping cups cooked chicken (shredded)
  • 1 cup sour cream (or plain Greek yogurt)
  • 1 cup corn (frozen or fresh)
  • Fresh cilantro (for garnish)
  • Shredded cheese (for garnish)
  • Tortilla chips (for serving)
  • Green onions (for garnish)
  • Avocado slices (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sauté chopped onion until softened, about 3-5 minutes. Add minced garlic and cook for an additional 30 seconds.
  2. Pour in chicken broth, diced green chilies, cumin, cayenne pepper, oregano, lime juice, salt, and pepper. Stir to combine.
  3. Rinse and drain great northern beans. For extra creaminess, puree a portion of the beans with a splash of broth until smooth.
  4. Add both pureed and whole beans along with corn to the pot. Simmer uncovered for 15-30 minutes to meld flavors.
  5. Remove from heat and stir in sour cream and shredded chicken until well combined.
