Ingredients
  

Shortbread Base
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
Apple Filling
  • 4 cups apples peeled, cored, and sliced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
Crisp Topping
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon salt

Method
 

Prepare the Shortbread Base
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the flour, salt, and vanilla extract, mixing until just combined.
  4. Press the shortbread mixture evenly into the bottom of the prepared baking dish.
  5. Bake in the preheated oven for 15 minutes.
Prepare the Apple Filling
  1. In a large bowl, combine sliced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly.
Make the Crisp Topping
  1. In a separate bowl, mix together oats, flour, brown sugar, melted butter, and salt until crumbly.
Assemble and Bake
  1. Remove the shortbread base from the oven and spread the apple filling evenly over the top.
  2. Sprinkle the crisp topping over the apples.
  3. Return to the oven and bake for an additional 25 minutes, or until the topping is golden brown.
  4. Allow to cool before cutting into bars.
