Method
Prepare the Shortbread Base
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the flour, salt, and vanilla extract, mixing until just combined.
- Press the shortbread mixture evenly into the bottom of the prepared baking dish.
- Bake in the preheated oven for 15 minutes.
Prepare the Apple Filling
- In a large bowl, combine sliced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly.
Make the Crisp Topping
- In a separate bowl, mix together oats, flour, brown sugar, melted butter, and salt until crumbly.
Assemble and Bake
- Remove the shortbread base from the oven and spread the apple filling evenly over the top.
- Sprinkle the crisp topping over the apples.
- Return to the oven and bake for an additional 25 minutes, or until the topping is golden brown.
- Allow to cool before cutting into bars.
