Ingredients
  

Salad Base
  • 4 cups mixed greens such as arugula, spinach, and kale
  • 1 cup shredded carrots
  • 1 medium apple sliced, preferably a sweet variety like Fuji or Honeycrisp
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts chopped
Apple Cider Vinaigrette
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Method
 

Prepare the Salad
  1. In a large salad bowl, combine the mixed greens, shredded carrots, sliced apple, dried cranberries, and chopped walnuts.
  2. Toss the salad gently to mix the ingredients evenly.
Make the Vinaigrette
  1. In a small bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the vinaigrette over the salad and toss to coat evenly.
