Method
Prepare the Eggs
- Place the eggs in a pot and cover with water. Bring to a boil over medium heat.
- Once boiling, cover the pot, remove from heat, and let sit for 10 minutes.
- Transfer the eggs to a bowl of ice water to cool for 5 minutes.
- Peel the eggs and slice them in half lengthwise.
Make the Avocado Filling
- In a mixing bowl, scoop out the avocado and mash it with a fork.
- Add lime juice, Dijon mustard, salt, and pepper to the mashed avocado and mix until smooth.
Assemble the Deviled Eggs
- Spoon or pipe the avocado mixture into the egg whites where the yolks were.
- Sprinkle with chopped cilantro for garnish.
- Serve immediately or refrigerate until ready to serve.
