Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Avocado Filling
  • 1 medium ripe avocado peeled and pitted
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste
  • 2 tablespoons chopped cilantro for garnish

Method
 

Prepare the Eggs
  1. Place the eggs in a pot and cover with water. Bring to a boil over medium heat.
  2. Once boiling, cover the pot, remove from heat, and let sit for 10 minutes.
  3. Transfer the eggs to a bowl of ice water to cool for 5 minutes.
  4. Peel the eggs and slice them in half lengthwise.
Make the Avocado Filling
  1. In a mixing bowl, scoop out the avocado and mash it with a fork.
  2. Add lime juice, Dijon mustard, salt, and pepper to the mashed avocado and mix until smooth.
Assemble the Deviled Eggs
  1. Spoon or pipe the avocado mixture into the egg whites where the yolks were.
  2. Sprinkle with chopped cilantro for garnish.
  3. Serve immediately or refrigerate until ready to serve.

Notes
