Ingredients
  

Shrimp Filling
  • 1 lb shrimp peeled and deveined
  • 1 tbsp olive oil for cooking
  • 1 clove garlic minced
  • 1 tsp lime juice freshly squeezed
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Avocado Mixture
  • 2 medium avocados ripe, diced
  • 1 tbsp cilantro chopped
  • 1 tsp lime juice freshly squeezed
  • 1 pinch salt to taste
Lettuce Wraps
  • 1 head butter lettuce leaves separated
  • 1 medium red bell pepper sliced for garnish
  • 1 medium lime cut into wedges for serving

Method
 

Prepare the Shrimp
  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute.
  2. Add shrimp, lime juice, salt, and pepper. Cook for 3-5 minutes until shrimp are pink and cooked through.
Make the Avocado Mixture
  1. In a mixing bowl, combine diced avocados, cilantro, lime juice, and salt. Mash gently to combine.
Assemble the Wraps
  1. Take a lettuce leaf and add a spoonful of the avocado mixture and a few shrimp on top.
  2. Garnish with sliced red bell pepper and serve with lime wedges.
