Method
Cook the Bacon
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
- Add the diced onion to the pot and sauté until translucent, about 5 minutes.
Build the Soup
- Stir in the minced garlic and cook for an additional minute.
- Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
Add Gnocchi and Cream
- Add the gnocchi to the pot and cook according to package instructions, usually about 2-3 minutes.
- Stir in the heavy cream, thyme, salt, and pepper. Allow to heat through.
Finish the Soup
- Remove the pot from heat and stir in the shredded cheddar and parmesan cheese until melted.
- Serve the soup hot, garnished with the reserved bacon.

For a vegetarian version, omit the bacon and use vegetable broth.
