Ingredients
  

Soup Base
  • 6 slices bacon chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 2 cups potatoes peeled and diced
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Gnocchi and Cheese
  • 1 package gnocchi about 16 oz
  • 1 cup sharp cheddar cheese shredded
  • 1 cup parmesan cheese grated

Method
 

Cook the Bacon
  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the pot and sauté until translucent, about 5 minutes.
Build the Soup
  1. Stir in the minced garlic and cook for an additional minute.
  2. Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
Add Gnocchi and Cream
  1. Add the gnocchi to the pot and cook according to package instructions, usually about 2-3 minutes.
  2. Stir in the heavy cream, thyme, salt, and pepper. Allow to heat through.
Finish the Soup
  1. Remove the pot from heat and stir in the shredded cheddar and parmesan cheese until melted.
  2. Serve the soup hot, garnished with the reserved bacon.

Notes
