  • 4 fillets Cod Fresh
  • 1 can Full-fat coconut milk
  • 1 juice Fresh lemon
  • 3 cloves Fresh minced garlic
  • Fresh cilantro or parsley to taste
  • Salt to taste
  • Pepper to taste
  • Red pepper flakes to taste

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan over medium heat, combine one can of coconut milk, the juice of one fresh lemon, minced garlic, and a pinch of red pepper flakes. Stir well and let it simmer for about 5-7 minutes until it thickens slightly.
  3. While the sauce is simmering, place your cod fillets in a baking dish. Season them generously with salt and pepper on both sides.
  4. Once the sauce has thickened, pour it over the seasoned cod fillets in the baking dish. Make sure the fish is well coated.
  5. Cover the baking dish with aluminum foil and bake for 20 minutes. After that, remove the foil and bake for an additional 10 minutes, allowing the top to get a light golden color.
  6. Once cooked, remove from the oven and let it rest for a few minutes. Before serving, sprinkle chopped fresh cilantro or parsley on top for a burst of freshness.
