- Preheat your oven to 375°F (190°C).
- In a medium saucepan over medium heat, combine one can of coconut milk, the juice of one fresh lemon, minced garlic, and a pinch of red pepper flakes. Stir well and let it simmer for about 5-7 minutes until it thickens slightly.
- While the sauce is simmering, place your cod fillets in a baking dish. Season them generously with salt and pepper on both sides.
- Once the sauce has thickened, pour it over the seasoned cod fillets in the baking dish. Make sure the fish is well coated.
- Cover the baking dish with aluminum foil and bake for 20 minutes. After that, remove the foil and bake for an additional 10 minutes, allowing the top to get a light golden color.
- Once cooked, remove from the oven and let it rest for a few minutes. Before serving, sprinkle chopped fresh cilantro or parsley on top for a burst of freshness.
