  • 1 pound boneless skinless chicken breasts
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 cup vegetable oil
  • 2 cups cooked jasmine rice
  • 1 cup shredded lettuce
  • 1 cup diced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • sesame seeds to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha

Method
 

  1. Prepare chicken by cutting into pieces and seasoning with salt, pepper, garlic powder, and paprika.
  2. Coat chicken pieces in cornstarch.
  3. Heat oil in a pan until hot, then fry chicken until golden and cooked through.
  4. In a bowl, mix mayonnaise, sweet chili sauce, and sriracha for the sauce.
  5. Assemble the bowl with rice as the base, topped with fried chicken, lettuce, cucumber, carrots, and green onions.
  6. Drizzle with sauce and garnish with sesame seeds.
