Ingredients
  

Chicken and Rice
  • 1 lb boneless chicken breast cut into bite-sized pieces
  • 2 cups cooked jasmine rice or any preferred rice
  • 1 tbsp olive oil for cooking chicken
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Bang Bang Sauce
  • 1/2 cup mayonnaise for creaminess
  • 1/4 cup sweet chili sauce for sweetness
  • 1 tbsp sriracha for heat
  • 1 tbsp lime juice for acidity
Vegetables
  • 1 cup shredded carrots for crunch
  • 1 cup cucumber sliced
  • 1 cup green onions chopped

Method
 

Cook the Chicken
  1. Heat olive oil in a skillet over medium heat. Add the chicken pieces, season with salt and pepper, and cook until golden and cooked through, about 7-10 minutes.
  2. Remove from heat and set aside.
Prepare the Bang Bang Sauce
  1. In a large bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
Assemble the Bowl
  1. In serving bowls, layer cooked rice, followed by the cooked chicken, shredded carrots, cucumber slices, and chopped green onions.
  2. Drizzle the Bang Bang sauce generously over the top.

Notes

Feel free to customize the vegetables based on your preference. Add more heat by increasing the amount of sriracha in the sauce.
