Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup BBQ sauce your favorite brand
Sweet Potatoes
  • 2 medium sweet potatoes peeled and cubed
  • 2 tbsp olive oil for roasting
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Toppings
  • 1 cup corn canned or frozen
  • 1 cup black beans rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced for serving
  • 1/4 cup cilantro chopped, for garnish

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 425°F (220°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
  2. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
Cook Chicken
  1. While the sweet potatoes are roasting, heat a grill or grill pan over medium-high heat. Toss the chicken pieces in BBQ sauce until well coated.
  2. Grill the chicken for about 6-8 minutes, turning occasionally, until cooked through and internal temperature reaches 165°F (75°C).
Assemble Bowls
  1. In a bowl, layer the roasted sweet potatoes, grilled chicken, corn, black beans, and cherry tomatoes.
  2. Top with sliced avocado and chopped cilantro. Drizzle with additional BBQ sauce if desired.
