Prepare Sweet Potatoes
- Preheat the oven to 425°F (220°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
Cook Chicken
- While the sweet potatoes are roasting, heat a grill or grill pan over medium-high heat. Toss the chicken pieces in BBQ sauce until well coated.
- Grill the chicken for about 6-8 minutes, turning occasionally, until cooked through and internal temperature reaches 165°F (75°C).
Assemble Bowls
- In a bowl, layer the roasted sweet potatoes, grilled chicken, corn, black beans, and cherry tomatoes.
- Top with sliced avocado and chopped cilantro. Drizzle with additional BBQ sauce if desired.
