Method
Prepare the Beef
- Heat olive oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
- Remove the beef and set aside. In the same pot, add chopped onion and garlic, sauté until softened, about 3-4 minutes.
Make the Sauce
- Return the beef to the pot, add crushed tomatoes, beef broth, oregano, thyme, salt, and pepper. Stir well.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 1 hour, until beef is tender.
Cook the Orzo
- After the beef is tender, stir in the orzo pasta and cook for an additional 15-20 minutes, until the orzo is al dente and has absorbed some of the sauce.
- If the mixture is too thick, add a bit more beef broth or water.
Serve
- Serve hot, topped with grated Parmesan cheese.
