Ingredients
  

Beef and Sauce
  • 2 pounds beef chuck cut into 1-inch cubes
  • 2 tablespoons olive oil for browning
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 can crushed tomatoes 28 ounces
  • 1 cup beef broth or stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Pasta
  • 1 cup orzo pasta
  • 1/2 cup grated Parmesan cheese for serving

Method
 

Prepare the Beef
  1. Heat olive oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
  2. Remove the beef and set aside. In the same pot, add chopped onion and garlic, sauté until softened, about 3-4 minutes.
Make the Sauce
  1. Return the beef to the pot, add crushed tomatoes, beef broth, oregano, thyme, salt, and pepper. Stir well.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for about 1 hour, until beef is tender.
Cook the Orzo
  1. After the beef is tender, stir in the orzo pasta and cook for an additional 15-20 minutes, until the orzo is al dente and has absorbed some of the sauce.
  2. If the mixture is too thick, add a bit more beef broth or water.
Serve
  1. Serve hot, topped with grated Parmesan cheese.
