Ingredients
  

Beef Roast
  • 3 pounds chuck roast trimmed of excess fat
Vegetables
  • 4 medium carrots peeled and cut into chunks
  • 4 medium potatoes peeled and cut into quarters
  • 1 large onion sliced
Seasonings
  • 2 teaspoons salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
Liquid
  • 1 cup beef broth or stock
  • 1 tablespoon Worcestershire sauce

Method
 

Prepare the Ingredients
  1. Trim excess fat from the chuck roast and season it with salt, pepper, garlic powder, thyme, and rosemary.
  2. Peel and chop the carrots, potatoes, and onion.
Layer the Ingredients in the Crock Pot
  1. Place the chopped vegetables at the bottom of the crock pot.
  2. Place the seasoned roast on top of the vegetables.
  3. Pour the beef broth and Worcestershire sauce over the roast.
Cook the Pot Roast
  1. Cover the crock pot and cook on low for 8 hours or high for 4 hours, until the meat is tender.
Serve
  1. Remove the roast and vegetables from the crock pot and let the roast rest for a few minutes before slicing.
  2. Serve with the vegetables and some of the cooking liquid.
