Ingredients
  

Base
  • 2 cups Brown rice cooked
  • 1 can Black beans drained and rinsed
  • 1 cup Corn canned or frozen
  • 1 cup Salsa your choice
Toppings
  • 1 cup Cherry tomatoes halved
  • 1 cup Avocado diced
  • 1 cup Shredded lettuce
  • 1 cup Shredded cheese optional
  • 1 cup Cilantro chopped
Dressing
  • 2 tablespoons Olive oil
  • 1 lime Juice freshly squeezed
  • 1 teaspoon Cumin ground
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Method
 

Prepare the Base
  1. Cook the brown rice according to package instructions.
  2. In a large pot, combine the cooked rice, black beans, corn, and salsa. Stir well and heat over medium heat until warmed through.
Make the Dressing
  1. In a medium bowl, whisk together olive oil, lime juice, cumin, salt, and pepper until well combined.
Assemble the Bowls
  1. Divide the rice and bean mixture among serving bowls.
  2. Top each bowl with cherry tomatoes, avocado, shredded lettuce, shredded cheese, and cilantro.
  3. Drizzle the dressing over the top of each bowl before serving.
