Ingredients
  

Blackening Spice Mix
  • 1 tbsp paprika smoked or sweet
  • 1 tbsp cayenne pepper adjust for spice preference
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp black pepper freshly ground
  • 1 tbsp salt
Salmon
  • 4 fillets salmon skin-on or skinless
  • 2 tbsp olive oil for cooking
Serving Suggestions
  • 1 lemon lemon wedges for garnish
  • 1 cup fresh parsley chopped, for garnish

Method
 

Prepare the Blackening Spice
  1. In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, black pepper, and salt.
  2. Set aside the spice mix for later use.
Prepare the Salmon
  1. Pat the salmon fillets dry with paper towels.
  2. Rub the spice mix generously over both sides of each salmon fillet.
  3. Heat olive oil in a skillet over medium-high heat.
Cook the Salmon
  1. Once the oil is hot, carefully place the salmon fillets in the skillet, skin-side down if applicable.
  2. Cook for about 4-5 minutes on one side until a crust forms.
  3. Flip the fillets and cook for an additional 3-4 minutes until cooked through.
Serve
  1. Remove the salmon from the skillet and let it rest for a minute.
  2. Serve with lemon wedges and sprinkle with fresh parsley.
