Ingredients
  

Pastry
  • 1 sheet puff pastry thawed if frozen
Filling
  • 8 oz cream cheese softened
  • 1/4 cup sugar adjust to taste
  • 1 tsp vanilla extract
  • 1 cup blueberries fresh or frozen
  • 1 tbsp lemon juice
Topping
  • 1 egg egg beaten for egg wash
  • 1 tbsp sugar for sprinkling

Method
 

Prepare the Filling
  1. In a mixing bowl, combine softened cream cheese, sugar, and vanilla extract. Mix until smooth.
  2. Gently fold in blueberries and lemon juice. Set aside.
Prepare the Pastry
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to smooth out creases.
  3. Cut the pastry into 4 equal squares.
Assemble the Pastries
  1. Place a generous spoonful of the blueberry cream cheese filling in the center of each pastry square.
  2. Fold the corners of the pastry over the filling to create a pocket and seal the edges by pressing with a fork.
  3. Brush the tops with beaten egg and sprinkle with sugar.
Bake
  1. Place the pastries on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 20-25 minutes or until golden brown.
  3. Remove from oven and let cool slightly before serving.
