Method
Prepare the Filling
- In a mixing bowl, combine softened cream cheese, sugar, and vanilla extract. Mix until smooth.
- Gently fold in blueberries and lemon juice. Set aside.
Prepare the Pastry
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface to smooth out creases.
- Cut the pastry into 4 equal squares.
Assemble the Pastries
- Place a generous spoonful of the blueberry cream cheese filling in the center of each pastry square.
- Fold the corners of the pastry over the filling to create a pocket and seal the edges by pressing with a fork.
- Brush the tops with beaten egg and sprinkle with sugar.
Bake
- Place the pastries on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Remove from oven and let cool slightly before serving.
