Ingredients
  

Cod Fillets
  • 4 fillets cod about 6 ounces each
Breadcrumb Topping
  • 1 cup dry breadcrumbs preferably panko
  • 1 tablespoon olive oil for moisture
  • 1 teaspoon paprika for flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley or fresh, chopped
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper to taste
Lemon Butter Sauce
  • 4 tablespoons butter melted
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest for added flavor

Method
 

Prepare the Oven and Cod
  1. Preheat the oven to 375°F (190°C).
  2. Rinse the cod fillets under cold water and pat dry with paper towels.
Make the Breadcrumb Topping
  1. In a mixing bowl, combine the breadcrumbs, olive oil, paprika, garlic powder, dried parsley, salt, and pepper.
  2. Mix well until the breadcrumbs are evenly coated with oil and spices.
Assemble the Dish
  1. Place the cod fillets in a greased baking dish.
  2. Spoon the breadcrumb mixture evenly over the top of each fillet.
Bake the Cod
  1. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
  2. While the cod is baking, prepare the lemon butter sauce by mixing melted butter, lemon juice, and lemon zest in a small bowl.
Serve
  1. Remove the cod from the oven and drizzle with the lemon butter sauce before serving.
  2. Garnish with additional parsley if desired.
