Method
Prepare the Oven and Cod
- Preheat the oven to 375°F (190°C).
- Rinse the cod fillets under cold water and pat dry with paper towels.
Make the Breadcrumb Topping
- In a mixing bowl, combine the breadcrumbs, olive oil, paprika, garlic powder, dried parsley, salt, and pepper.
- Mix well until the breadcrumbs are evenly coated with oil and spices.
Assemble the Dish
- Place the cod fillets in a greased baking dish.
- Spoon the breadcrumb mixture evenly over the top of each fillet.
Bake the Cod
- Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
- While the cod is baking, prepare the lemon butter sauce by mixing melted butter, lemon juice, and lemon zest in a small bowl.
Serve
- Remove the cod from the oven and drizzle with the lemon butter sauce before serving.
- Garnish with additional parsley if desired.
