Ingredients
  

  • 250 g Pasta (penne, rotini, or fusilli)
  • 300 g Broccoli Florets (fresh or frozen)
  • 400 g Chickpeas, drained & rinsed 1 can
  • 4-5 cloves Garlic, minced
  • 60 ml Olive Oil
  • ¼ teaspoon Red Pepper Flakes
  • 60 ml Vegetable Broth
  • 1 tablespoon Lemon Juice
  • 30 g Grated Parmesan Cheese optional
  • Salt to taste
  • Black Pepper to taste

Method
 

  1. Cook pasta according to package instructions until al dente.
  2. Add broccoli florets to the pasta pot during the last 2 minutes of cooking.
  3. Drain pasta and broccoli, then set aside.
  4. In a skillet, heat olive oil over medium heat; sauté garlic and red pepper flakes until fragrant.
  5. Add pasta, broccoli, and chickpeas to skillet; toss to combine.
  6. Stir in vegetable broth and lemon juice; season with salt and pepper.
  7. Serve with grated Parmesan cheese if desired.
