Ingredients
  

Wet Ingredients
  • 1 cup unsalted butter browned
  • 1 cup pumpkin puree canned or fresh
  • 1 cup brown sugar packed
  • 1/2 cup maple syrup pure
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup chocolate chips optional

Method
 

Prepare the Butter
  1. In a saucepan, melt the butter over medium heat, stirring frequently until it turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.
Mix Wet Ingredients
  1. In a large mixing bowl, combine the browned butter, pumpkin puree, brown sugar, maple syrup, and vanilla extract. Whisk until smooth.
Combine Dry Ingredients
  1. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in chocolate chips if using.
Bake Cookies
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are set but the centers are still soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
