  • 2 tbsp butter or olive oil
  • 1/3 cup Parmesan cheese
Shrimp Topping
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 1/2 cups cherry tomatoes
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped

Method
 

Cooking Steps
  1. Cook polenta until creamy and season with salt and butter or olive oil.
  2. Spread the cooked polenta into a baking dish.
  3. In a skillet, sauté garlic and shrimp in olive oil until the shrimp are just cooked.
  4. Blister the cherry tomatoes in the same skillet and add fresh basil.
  5. Spoon the shrimp mixture over the polenta layer in the baking dish.
  6. Bake in a preheated oven at 375°F for 15-20 minutes.
