Ingredients
  

Chicken and Sauce
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup buffalo sauce adjust to taste
  • 1 tbsp olive oil for cooking
Cottage Cheese Base
  • 2 cups cottage cheese preferably low-fat
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup green onions sliced
Toppings
  • 1/2 cup blue cheese crumbles optional
  • 1/4 cup celery diced, for crunch
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

Cook the Chicken
  1. Heat olive oil in a skillet over medium heat. Add chicken pieces and cook until browned and cooked through, about 7-10 minutes.
  2. Pour buffalo sauce over the cooked chicken and stir to coat. Cook for an additional 2-3 minutes until heated through.
Prepare the Bowl
  1. In a mixing bowl, combine cottage cheese, cherry tomatoes, cucumber, and green onions. Mix well.
  2. Divide the cottage cheese mixture into serving bowls.
Assemble and Serve
  1. Top each bowl with the buffalo chicken mixture.
  2. Sprinkle with blue cheese, celery, and parsley as desired. Serve immediately.
